Dubai is a melting pot of cultures and culinary identities. With millions of expats of various nationalities calling it home, their food and flavours have found unique ways to merge and find new expression. With 20 million international visitors per year expected by 2020*, the continued scope and diversity of its Culinary Arts is essential to its tourism industry and visitor experience.

The one-year Certificate programme deals not only with the obvious focus of food preparation, but explores areas such as Aspects of Nutrition, Food Safety and Sanitation, Culinary and Baking Fundamentals, and Food Service Purchasing.

The Diploma programme, which is an additional year after the certificate, builds on these skills with further hands-on, practical training in business, management, food science, and nutrition.

Course Structure

YEAR ONE | Certificate in Culinary Arts (Level 4)

During the one-year Certificate in Culinary Arts programme students study the following subjects as core units which provide the fundamental business and academic skills required in any culinary arts related position:

  • Cultural Awareness and Workplace Communication 

Culinary Arts students will also study specialised units giving them a broad knowledge about the key components of the tourism sector as well concrete skills to make them work ready. The units are:

  • Introduction to Culinary Arts
  • Preparing for a Career in Culinary Arts
  • Food Safety and Sanitation
  • Culinary Fundamentals 1, 2, 3
  • Introduction to Hospitality (short)
  • Aspects of Nutrition
  • Appetizers
  • Garde Manger: Hors d’oeuvres and Salads
  • Meat Preparation
  • Seafood Preparation
  • Poultry and Game Preparation
  • Dessert Preparation
  • Baking Fundamentals
  • Restaurant Operations
  • Industry Internship

YEAR TWO | Diploma in Culinary Arts (Level 5)

Upon successful completion of the certificate programme, students can choose to progress to the Diploma in Culinary Arts programme, which requires an additional year of study. The Diploma focuses on teaching students more supervisory, teamwork and leadership skills. You will also have the opportunity to tailor your studies to suit your career aspirations through a selection of option modules and complete a longer industry internship placement of at least 4 months.

  • Menu Creation
  • Food Preservation
  • Food Purchasing
  • Advanced Baking
  • Pastry and Confectionery
  • Chocolate
  • Industry Internship

*The Diploma programme is only available to students who have met the required GPA progression requirements when completing the one year certificate programme.

 

*On successful completion of all of the qualification level requirements, certificates and diplomas will be issued within 8 weeks.

*Please note there is a minimum number of students required to run this programme.
